Vegan Banana and Raspberry Layered Traybake

So this week, as it is Valentines Day coming up, I have decided to do little treat ideas. I thought that what says I love you and care for you more than a batch of homemade baked goods? Nothing. So this recipe is a Vegan Banana and Raspberry Layered traybake. I wanted this recipe to be able to adapt to a dairy free diet as well, as finding dairy free Valentines day related goods in shops can become a hard task. This traybake is a light and sticky sponge with a banana base and fruity raspberry top and, like I did, iced with love in heart shaped patterns!


 

Ingredients

 

For the Banana mixture
 
200ml Soya milk
15g nesquik banana powder
3/4 teaspoon cider vinegar
75ml vegetable oil
125g caster sugar
1 ½ teaspoons vanilla essence
125g plain flour
27g cornflour
1/2 teaspoon bicarbonate of soda
¾ teaspoon baking powder
 
For the Raspberry mixture
200 ml Soya milk
3/4 teaspoons cider vinegar
75ml vegetable oil
75g fresh raspberries
125g caster sugar
1 ½  teaspoon vanilla essence
125g plain flour
27g cornflour
½ teaspoon bicarbonate of soda
¾ teaspoon baking powder
 
 

Method~

1.For the banana mixture, mix the nesquik mixture with the milk and stir until dissolved. Place the milk mixture, vinegar, oil, sugar and vanilla in a large bowl and whisk thoroughly.
 
 
2.Measure out flours, bicarbonate of soda, and baking powder. Mix well and then sift into the wet ingredients. Mix well to combine, use a whisk if necessary.
 
 
3.For the raspberry mixture, crush the fresh raspberries in a bowl until it starts to look like a puree. Place the raspberries, milk, vinegar, oil, sugar and vanilla in a large bowl and whisk thoroughly.
 
4.Measure out the flours, bicarbonate of soda and baking powder. Mix well then sift into the wet ingredients. Mix well to combine, use a whisk if necessary.
 
5.Pour the banana mixture into a lightly oiled 10x8 square tin then pour the raspberry mixture on top of the banana mixture. Bake in the preheated oven for 30-35 minutes at 175’C and to check if it is done by inserting a sharp knife or a cake tester and take out of the oven if when the knife is removed is clean.
 
6.Leave to cool then using a heart shaped cutter cut into cute little hearts and give to a loved one!
 
I decorated mine with simple icing sugar and red food colouring and had a little fun decorating these heart shaped treats!
 
 
As you can tell I had lots of fun icing these!

    2. I tried them. Delicious!! But I am not sure if they were too moist. Would that be too much milk in my mix? Ace oliveekid!!
