From a young age I have been amazed by the joys of baking and what some simple ingredients can do to your taste buds from a simple egg custard tart to a big blown opera cake, they can all have different textures and flavours when they simple were a bag of flour and eggs.
I think that my first true memory of baking is my mum buying me those sachets of cake mix from the supermarket with the rice paper pictures of the Scooby Doo gang and that agonising wait while you watched the tedious process of the 12 cupcakes rising from batter to a fluffy cake, that almost seems to melt in your mouth, in a matter of minutes. That was for me the best afternoon that I could imagine.

When I got to the age of around 10 I decided to take a shot at making scones after many years of only filling the mince pie pastry with the mince meat (I am exceptionally good at it if I do say so myself!) It was a change to what I usually did which was watch the repeats of Hannah Montana. Then after that batch of plain scones I fell in love again and baked with my Nan for a while then, as usual, I got bored and went back to my weekends of Hannah Montana and guinea pig antics (we had eleven at one point!)
But my love for baking once again bloomed this year when I watched every episode of The Great British Bake Off season 5 and saw all the works of art they created from a simple Victoria sponge or the
doughnuts filled with cream and I baked for weeks. Then when my
birthday arrived I got a heap of baking equipment plus The Great British Bake Off Big Book Of Baking which is filled top to bottom of some amazing baking recipes for armatures and some of the most experienced of bakers.

And now we get to the present day and everyday I have baked without fail in the Christmas holidys and my skills have come along from simple piping skills to learning how to knead dough! To give you a run down on everything I have baked in the last 14 days there is simple gingerbread men, the French biscuit Biscotti which means baked twice, I have made choux caramel puffs, sundried tomato and chilli, and garlic and basil dough balls, chai spice drop scones, profiteroles, éclairs, poppy seed bloomer, plum clafoutis, Bavarian plum cake (we had lots of plums!), and last but not least macarons.

I hope that one day I can own my own baking book or even be a baker but they are all dreams and for the time being baking for my family will do me fine!
