Sultana and Apricot Scones

I have never really made scones before until last Sunday and I never knew how easy they were! For this recipe I have added sultanas and apricots to make them taste even better. I recommend to serve straight from the oven with a little butter! 


Ingredients~ 


225g  Self raising flour
Pinch of salt
55g Butter (or to make vegan margarine)
25g Cater sugar
50g Sultanas
50g Apricots, sniped into sultana size chunks.
150ml Milk (or soya milk)
1 Free range egg, beaten to glaze (or you can use a little soya milk) 

Method~


1. Pre heat the oven to 220'c. Lightly grease a baking tray (or two if necessary) 

2. Mix together the flour and salt and rub in the butter or margarine.

3. Stir in the sugar, sultanas, apricots and then the milk to form a soft dough.

4. Turn onto a floured surface and knead very lightly. Pat out to a round about 2cm thick. Use a 5cm cutter to stamp out rounds and place on to a baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up. 

5. Brush the scones with the beaten egg, or soya milk, and bake for 12-15 minutes until well risen and golden.
