After so many views on my orange and white chocolate cookies I decided to try white chocolate and cranberry and they were delicious, that delicious that everyone went back for seconds! Let me know your opinion on these smooth white chocolate cookies that have a fruity burst and chewy texture that the cranberries have on the cookie!
Ingredients~
150g Salted butter, softened
80g Light brown muscovardo sugar
80g Granulated sugar
2 tsp Vanilla extract
1 large egg
225g Plain flour
½ tsp Bicarbonate of soda
¼ tsp Salt
130g White chocolate chips or chunks
80g Dried cranberries, chopped into small slivers.
Method~
1. Pre-heat the oven to 170'C fan. Line 2 baking trays with baking parchment.
2. Put the butter and sugars into a bowl and beat until creamy. Beat in the vanilla extract. Sift the flour, bicarbonate of soda and salt over the mixture and mix in with a wooden spoon. Add the chocolate chips and cranberry slivers and stir well.
3. Using a teaspoon, place small mounds of the mixture well apart on the baking trays. Bake in the oven for 10-12 minutes or until light brown (they do spread so be careful) on the edges and still slightly soft in the centre.
