Blueberry and white chocolate is a combination that is extremely under rated and it is one of the best! This cupcake recipe is so fun and is a recipe that makes you want to come back for more even though we know we shouldn't.
Ingredients
250g Self-raising flour
1 Level Tsp Baking powder
50g Softened butter
75g Caster sugar
120g Blueberries
80g White chocolate, chopped
2 Large eggs
250ml Milk
Method
1. Pre-heat the oven to 180'C fan. Place muffin cases in a 12-hole muffin tin.
2. Measure the flour and baking powder into a large bowl. Rub the softened butter with your finger tips until the mixture represents fine breadcrumbs.
3. Stir the sugar, blueberries and chopped white chocolate.
4. Mix together the eggs and milk, then pour the mixture into the dry ingredients. Mix quickly to blend, The mixture should have a lumpy consistency. Spoon into the prepared cases and fill to the top, well almost.
5. Bake in the pre-heated oven for 20-25 minutes until well risen and golden. Leave to cool in the tins for a few minutes the transfer to a wire rack to cool. Serve warm and enjoy!
