As a lover of all things brownie related and healthy I had to give the Deliciously Ella Raw Brownies a try. I had to adapt the recipe and it made it super tasty! One thing I would love to do when I am older is have a wholefoods diet but not be one that is really restricting and stops me from going out with friends for meals, so finding recipes that I can add into my daily life that are 100% good for you is always amazing. Plus it is one of those recipes you can slip into the kids lunch boxes that they will love all the same!
As this recipe is made with dates, pecans and cocoa powder (and a dash of honey!) it is so good for you and taste a lot like Nakd bars, if you know what they are then we can be friends. With a combination of these ingredients it makes them very chewy, with a slight crunch, then with the rich taste of the dates and chocolate just makes them even better!
Ingredients~
140g Pecans
380g Medjool Dates, pitted~
(these are more chewy so help the mixture stick together better than normal dried dates.)
3 Tbsps Raw Cocoa Powder~
(you can use normal baking cocoa powder.)
1 Tbsp Honey (optional)
Method~
1. Pulse the pecans in a food processor until they form a crumbly mixture, then add the pitted dates, cocoa powder and honey, if you are using it, and blend until the mixture is very sticky.
2. Now take the mixture out and place it into a baking tray. Press it down firmly right to the corners (or you can just use half of the tray like I did.)
3. Place in the freezer to firm up for 1 hour. Once this period is over store them in the fridge. I cut them up into squares and placed in a tin for handy snacking.
