Easy Vegan Microwave Treacle Sponge

An easy vegan dessert that only takes 20 minutes? This is any vegans dream and it has finally come true! I found this recipe on the internet and decided to alter it to make it even tastier. The luxurious treacle and the soft sponge is anyone's dream from a microwave sponge!

Ingredients~

220g Self-raising flour
100g Soft brown sugar
2 level teaspoons of Baking powder
200ml Water
120ml Oil
5 Tbsp Golden syrup

Method~

1. Place the self-raising flour, soft brown sugar and baking powder into a 18cm pyrex bowl and rub together with your fingertips to break any large lumps of sugar up.

2. Now mix in the oil, water and  2 tablespoons of the golden syrup and mix well. Using a spatula clear the sides by making it level. Now spoon the rest of the treacle in the middle and let it sink to the bottom. Cover with microwave-proof cling film and microwave for 8 minutes.

3. Leave to stand for 7 minutes then turn out onto a plate and serve with soya custard or even better soya ice cream!
