Mini Egg Brownies!

I am a huge sucker for brownies, as you may already know, so when Mini Eggs came onto the shelves the first thing I had to do without a doubt was make Mini Egg brownies! On Fridays I take to school baked goods for all of my friends so when it came to today I dug out that bag of Mini Eggs I had stashed away in my school bag and decided to make these super chocolatey, slightly Easter related brownies and if I do say so myself I love them even better than normal brownies *gasps*. 
 


 

Ingredients~ 


275g Softened Butter
275g Caster sugar
4 Large eggs
75g Cocoa powder
100g Self raising flour
50g Plain chocolate chips
1 bag of 90g Cadbury Mini Eggs.
 

Method ~

 
1. Preheat the oven to 160'c fan. Grease a 30x23cm traybake or roasting tin then line the base and sides with baking parchment. 

2. Measure all the ingredients into a large bowl, except the Mini Eggs, and beat until evenly blended. Spoon the mixture into the prepared tin, scraping the sides of the bowl with a plastic spatula to make sure all the mixture is used (you don't want to waste any!). 
 
3. Spread the mixture gently to the corners of the tin and level the top with the back of the spatula. 

4. Try to slice the Mini Eggs in half but if the crumble leave to one side. Place all the halves in a row on top of your brownie mixture. Now for the crumbled ones, chop them up fine and so you can sprinkle them on top of your brownie mixture.
4. Bake in the preheated oven for 30-40 minutes. The brownies should have a crusty top and a skewer inserted into the centre comes out clean. 
 
5. Leave the brownies in the tin to cool and then cut into 24 squares. Store in an airtight tin.
